When we were shopping last week, we spotted a very good deal on two packets of salmon fillets – something we normally don’t eat. I’m not the biggest fan of salmon, and have never been able to understand why people rave about it, but we are trying to broaden our food horizons, so we bought them.
Sweet Chilli Salmon Stir-fry I cut the first pair of fillets into chunks and marinaded them in a packet of sweet chilli sauce in the fridge (although you could skip this stage if you are in a hurry and simply cook the salmon in the sauce).
2 salmon fillets, cut into chunks 1 packet (or a couple of tbsp) sweet chilli sauce 1 carrot, shaved into ribbons or cut into think batons 2 tbsp sweetcorn kernels 4 button mushrooms, sliced 2 gloves garlic, crushed 1 small onion, thinly sliced Splash of vegetable oil Rice or noodles to serve
With the rice on to cook, I prepared all the vegetables, then summoned the Stir Fry Master
